- If adobo doesn’t have a sour component that you can discern, then it’s not really Filipino adobo. It can still be delicious of course :-)
- And if you don’t like sour then that’s valid of course :-) I do still recommend trying one of those canonical Filipino dishes that lead with sour. Maybe you will like it :-)
- My favourite of the canoncial sour dishes is sinigang (tamarind souring is amazing) of course, I do like a very sour adobo though (most of my non Filipino friends don’t like adobo or sinigang as sour as I like it!)

Also, the super sugary stuff is American colonial brainwashing and big food, it is not really representative of Filipino food and Filipino bread is amazing despite what Spanish colonizers thought, just like the Vietnamese they took the colonial bread and made it work for them.
